Here is my latest entry...sorry I missed yesterday, but was so tired and stiff after an hour long workout that I bypassed my blog and just crashed and burned offline.  I will make up for it today, maybe will post more than one recipe, we shall see.....

Gingerbread waffles:

2 1/4 C. flour (sifted)
1 1/4 tsp. baking soda
2 tsp. ginger
1 C. dark moleasses
1/2 C. milk
1 egg separated (white stiffly beaten)
1/2 C. butter/margarine (melted)

Sift dry ingredients together. Beat egg yolk. Add moleasses and milk. Combine egg and flour mixture.  Add melted butter, and fold in stiffly beaten egg white.  Bake in waffle iron.  Serve with syrup or ice cream.

These are fantastic...I think they would taste great with pumpkin pie ice cream...
