Moments ago I posted about strokes that could worsen or become deadly due to the cooler weather on the horizon... Here is the first of many new tried and true recipes i want to share with my friends:

Pasta Ala Carbonara
Ingredients:
1 lb dried pasta such as spaghetti, angel hair or tagliatelle
4 tbsp olive oil
6 oz bacon or pancetta, finely chopped
2 garlic cloves, minced
5 large eggs
1 cup grated parmesan or parmesan/romano cheese (with extra on the side for serving)
freshly ground black pepper (to taste)

directions:
Bring a large saucepan of salted water to a boil, add the pasta, and cook according to package instructions until al dente.

While pasta is cooking, heat the oil in a large frying pan over medium heat. Add the pancetta/bacon and cook, stirring occasionally, about 6 minutes, until crisp.  Add the garlic and cook for one minute.

In a medium bowl, beat the eggs with the parmesan/romano cheese, season with pepper, and add to the contents of the pan with the pancetta/bacon, including the rendered grease.  Drain the pasta well and return to the saucepan, then quickly stir in the egg and pancetta/bacon mixture until the pasta is well coated. Serve immediately, with extra cheese on the side.


Notes:  This is a fantastic, quick and inexpensive dinner to make.  Serve it with a little garlic bread and a salad, and it is also a great romantic dinner as well as a family pleasing meal.
